Strawberry Grapefruit Salad



1 pint strawberries, trimmed and quartered
3 medium (or 2 large) grapefruit, peeled and segmented
½ cup mint leaves torn
Agave nectar or honey to sweeten to taste (optional)


Combine all ingredients in a mixing bowl and serve immediately, or refrigerate, covered, until service. Garnish with small mint springs.

Wow! I LOVED this salad! I hadn't tried agave nectar before but picked it up at the health food store (similar to honey but not quite so thick). My grapefruit didn't end up looking quite as beautiful as your photo - I completely got rid of the "skin" part so that it was mostly chucks of the insides. But it was so delicious! A great summer salad!

I'm glad you liked it. This salad has be come a big hit. Variations can include using cinnamon, balsmic vinegar, honey, toasted almonds. You can mix it up any way you'd like, but as long as the three main ingredients are top notch -- strawberries, grapefruit and mint -- it will be delicious!
